Roasting coffee is as much art as science. We began roasting a few years ago, roasting and burning through air poppers, but gaining the ear and nose for a perfect roast. After continual tweaks and hacks, we invested in a small home roaster and began roasting coffee for family and friends. They encouraged us to produce our coffee commercially. We use a 1kg fluid bed and computer controlled roaster for consistency and quality. Each roast is carefully tracked and monitored by temperature, with attention to the best flavor development for the particular coffee. We roast on-demand, usually on Mondays and Fridays. Coffee is shipped USPS and arrives on your doorstep at the beginning of its peak flavor. By comparison, your local coffee chain’s coffee has an expiration of 6 months from its roasting. Even the costly boutique coffee will typically be weeks to months old. If haven’t tasted a micro-roast yet, the proof will be in your cup. Every batch is unique, often seasonal, and always fearlessly roasted for you. Enjoy!

We've had several batches from Coffee by Gillespie, and it is incredible the breadth of flavors that are brought out in the coffee. I'm used to the disappointment of tasting a new coffee and immediately discovering that they are overpoweringly acidic or have that burnt character; not the case here. With all of these coffees there has been a great combination of richness offset by sweeter notes. I opened a bag of the 1517 Roast for a pour over this morning, and it was one of the best cups of coffee I've ever had. I look forward to working my way through the rest of the types I have not tried, but I think 1517 is one just to have on hand.
