This might be the best beef I've ever had in my life. I've enjoyed their beef at many of my favorite Madison restaurants and finally made it out to the farm. Wow wow wow! I purchased several steaks, burger and chuck roasts. Absolutely incredible. I worked in the restaurant and food service industry for years and this is far and away the best beef I've ever made. Absolutely incredible!

Incredible people. Incredible beef. Incredible farm. Far and away the best beef I've ever had. If you're serious about beef, this is the place to get it. Even if you aren't a professional chef, this will be the most flavorful, tender beef you'll ever have if your life. Unbelievable steaks and burgers!

I bought three beef products from Highland Spring Farm. My expectation was high considering the price that I paid for the beef. I purchased a chuck roast, a flat iron steak, and beef short ribs. Regretfully, all three products were inexcusably tough. I know that beef ribs are normally a fatty cut, but these ribs had entirely too much fat for the price per pound. I would not recommend this beef to a serious cook.

Can’t say anything about the beef, but we did purchase pork from Highland. It must have been a anorexic pig because the ribs had almost no meat on them. Chops were very small as well. We got brats made that were extremely dry, but that may have more to do with the processing place.
