Panciuto is a chef-driven restaurant that creates Italian cuisine with Southern ingredients. Here, nothing is more important than the food on the plate. That is why Panciuto works closely with its network of farmers and suppliers to get the freshest ingredients possible into the kitchen and to the guests. While technically a Southern restaurant, Panciuto is constantly adding to the meal and creating more and more diverse takes on what Southern cuisine can actually be.

Panciuto's menu is always evolving. Diners can expect to see little tweaks every day and by the time a month has elapsed it is usually a completely different menu. However, there are certain dishes that are so popular that they tend to stick around longer than others. These include great dishes like the grilled pork shoulder with onion glaze, cucumbers, marinated tomatoes, ghiaia pasta salad with zephyr squash and a basil aioli.

Best restaurant ever! The vegetable board is amazing! The goat cheese tortelloni likewise. Salads are wonderful. Great filling dinner for vegetarians and lots of interesting meat options also. You don't have to order more than two things to be full, so go even if you are on a more modest budget. Good bourbon and cocktails selection. Service is hard to beat.

This was hands down one of the best dining experiences I have ever had. The staff was amazing with Adam and Adriah as the real stand outside. If you are ever in Hillsborough NC. put this place on your must try list.

I ate every bite of the only vegetarian entree on the menu. (Pasta stuffed with goat cheese, greens with blueberry drizzle.) Really appreciating the tasty and beautifully presented farm-to-table dishes. Creativity appreciated. Amused by the lottery winning numbers in the lower right corner of the menu, so hoping there’s room on the page calling attention to the restaurant’s pledge to sourcing local ingredients. Wishing the local farms were listed next to the menu items to raise awareness with diners. After hearing about the rookie mistake of filling up on bread, gosh, we didn’t get any and failed to inquire with the very attentive wait staff. Our bad. We were enjoying our birthday guest too much. I guess that means we’ll just have to go back for our next special occasion. We will!

My wife and I live down the Street from Pancuito and often come here on special occasions. Not only is the food locally raised, has tons of flavor and generous portion sizes, the staff are super friendly, knowledgable and the atmosphere is great. Definitely try their squid ink or butternut squash raviolis. The desserts are okay, but the main courses is where it's at. The country bread is also fantastic, but don't make a rookie mistake and fill up on it too quickly. They also have a wide selection of bourbons and can do a flight of a few them, which is a nice sampling in case you don't want to buy a bottle right out of the gate. Definitely recommend! They have something for everyone!

What a wonderful experience. We normally stick to Raleigh & Durham but decided to venture out to visit Panciuto. Everything from the bourbon tasting to the main courses were absolutely perfect. Oh, and the service was outstanding. What a gem. Can't wait to visit again.
