We still use copper kettles and wooden paddles to make our hard candies, and continue to dip our chocolates by hand. Much of our equipment is irreplaceable due to advances in equipment technology and production. But one thing is certain…when you talk about quality chocolates…the new styles of equipment and production just don’t hold a candle to the old way when it comes to quality and flavor!
