I had a large hog butchered here in March. The chops and roasts were ok, but the ground pork and Sausage have an off odor and taste slightly rancid. My family is still eating it and we haven't gotten sick but the flavor is off. The bacon however was completely ruined. I have nearly 40 lb of bacon that no one in my family is willing to eat, it simply tastes old. I had a hog processed at a different butcher last year with no issues. I don't know what happened but I won't be bringing anything here again.
