My wife got me 5 pounds of beef plate ribs for my birthday. She is vegan and told the person working the counter that she didn't really know what she was looking for and they helped her out. When I opened the package to start smoking, I noticed that there was a lot of fat and not much meat on the ribs. I trimmed a little bit of the fat off, but didn't want to trim too much as there wasn't much underneath. After cooking and cutting, I realized the ribs were approximately 70% fat. After eating the rib with the most meat on it, I weighed the meat from the rest of the ribs and it came out to 333 grams. Being very generous, I'll say the first rib had 300 grams of meat on it. That totals to about 1.4 pounds. I'd like to give the benefit of the doubt, but it is very disappointing to pay 80 for beef ribs and only get 1.4 pounds of meat. I can't help but feel that my wife was given the portion with barely any meat on it because she doesn't eat meat and didn't know what to look for.

The Other Side Academy loves Western Daughters Butcher Shop! We have 32 students and every Saturday we have \Burger Night\ where the students take turns grilling. Never once have we had a bad burger when we have used Westen Daughters beef, no matter how is was cooked. We appreciate that it is grass fed and local. Amanda has been so kind to our family that five stars just isnt enough!

Absolutely the best customer service and the best meat money can buy. Their ethics are bar none. I have been shopping here for three years, and have never been met with more patience and knowledge in a specialty shop. I come with questions, every time. Tell me about the farm, the animals, your processes, how do I prepare this?? What do you recommend to cook as a side? Everything. They respond with all the answers and then some. They always have. As an ethical vegetarian with a carnivorous partner, I won't shop anywhere else.

I was passing through Denver and needed groceries before heading to Summit County. This is a great butchershop, especially if you care about the quality of your meat AND the way animals are raised. It feels like a small place but what they have behind glass covers the basics and they stock less common things like marrow cubes and ghee. They also have more dairy, eggs and some produce. Nice. Plus, there's more meat in the back if you ask. The service was great too. I was helped to choose a dry-aged top sirloin that I won't forget. I can't wait to come back!

I was gifted a dry aged bone in New York strip and this may have been the best home cooked steak I've ever eaten. The steak was like butter and just melted in my mouth, I was floored by the fact that I was able to cook that with my kitchen set! Thank you all for making such a superior steak and I'm excited to expand my cooking skills!
