The proof is in the taste! Proof Bakery is one of the best examples I have tasted here in LA for all things said, the art of pastry making. I find myself comparing their croissants to ones I had at the C.I.A. It is a near perfect creation of buttery goodness. Their baked goods are certainly a passion for great work. The sandwich I had this past weekend was more than amazing. Proof Bakery makes most everything in small batches and the care they put into their work is amazing. The weekends are crowded and they will run out of items quickly. The available seating is scarce, so you should feel lucky to find something. Be prepared to choose quickly and be sure to order a cup of their excellent coffee.

A solid choice for viennoiserie (croissant types) in LA, but I don’t think the lines are warranted. Better viennoiserie can be found at Republique and Chaumont.

It's yummy! Anyone who is a fan of fresh baked goods and great coffee needs to come and try it out on their own. They even have tasty little sandwiches that normally sell all of their sweets!

It's a good little bakery/coffee shop with plenty of pastries, cakes, cookies and coffee. I ordered a few pastries and a latte and it was good. I don't see why people make a long line for this place though, the coffee was good but far from the best, and pastries are also good but not something I would make a line for. Prices are the usual third wave coffee shop prices at 4.50 for coffee and 3 for pastries (At least the ones I got). Service was good, the place is kept clean and very strict with COVID rules which is great for us customers and their employees. Would swing by again if there's no line.
